What does a pansexual make with their bi mom? PAN-cakes of course!
My mom and I often would make this vegan pancake recipe together. Feel free to add in fruit or vegan chocolate chips.
2 cups whole wheat flour
1/2 cup cornmeal
2 T Fflax meal or 1 tsp chia seeds soaked in a tiny bit of water
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp ginger (Optional)
1/8 tsp cloves (Optional)
1/4 cup apple butter
1.5 cups vanilla almond milk
1/8 cup maple syrup
1/4 tsp apple cider vinegar
Mix dry ingredients together.
Add wet ingredients.
Batter should be spongy not thin and runny.
Fry over medium heat uncle golden brown on both sides. In general you flip pancakes when bubbles of air start coming through the batter.
Makes 6 very large pancakes, that are very filling.
